The Gastrocast, episode #92, has been published over at the Gastrocast Blog. In this week’s episode, Chef Neal discusses the importance of maintaining biodiversity by eating rare breed animals–really not as gruesome as it sounds. If you want to preserve a breed of livestock, the best way to support it is to create a demand for its meat, or wool, or milk. In other words, consume it in some way. Without this diversity the genetic pool of life grows less and less adaptible to disease, climate change and numerous other imponderables.
Also, an article in the BBC sparks Neal to discuss the importance of not only the nutritive benefits of Organic Foods but also the environmental aspect and how important it is to support local farmers in their endevors to be less dependent on commercial, corporate and large-scale solutions for their agricultural needs.
Finally, the show raps up with some cooking tips on making an earthy lamb and cauliflower dish.
